This is an easy peasy recipe that I am keeping in my files for corn season as it hits its stride in the Northeast. Since I live in an apartment in New York without access to a a grill, boiling corn in salted water used to be my favorite method. Also, I try to avoid using the microwave whenever possible. Oven roasting ears in the husk is so easy with less clean-up that I've decided this will be how I will cook corn on the cob going forward.
Simple Oven Roasted Corn Recipe
Ingredients(from Tyler Florence)
- 4 ears fresh corn
Method
- Preheat oven to 350 degrees F. Place corn husks directly on the oven rack and roast for 30-45 minutes or until corn kernels are soft. Peel down the husks and use as a handle when eating.
You may also consider brushing the corn with melted butter, sprinkling with chili powder or lime juice. This recipe also lends well to apartment dwellers without access to a grill, but desire that charred flavor. Simply pull off the husk from the roasted corn, brush olive oil, and place directly under the broiler for a few minutes on each side, watching to make sure the corn browns but doesn't blacken.

Great idea to oven roast. But if you want a fast way to get corn on the table in less than 10 minutes, either microwave it or pressure cook. Pressure cooking is my favorite because the corn comes out so juicy that you don't even need butter or salt.

For such a simple recipe, it sounds fantastic! I bet the roasting will really bring out the corn's sweetness.
What could be easier than that? We won't have corn for awhile and I will definitely try this method of roasting the ears.

I have to admit that I am quite boring when it comes to cooking corn. Other than boiling it...I used to have it grilled on the charcoal when we used to vacation in my Papa's Italian village.
Strange, how I never gave a thought to baking it...and why not? After all...I roast every other vegetable I get my hands on.

Corn on the cob is something I never get tired of in the summer! I could probably eat it all year long! My dad always grills it :)
I prepare corn all ways possible this time of year. It is a relatively short season, so I take advantage of having wonderful local corn. Oven roasting is something I have not tried, so I will give it a whirl!
There's no fresh corn until the fall around here - unless we want to buy what they bring in from Mexico... and that's a carbon footprint! But, I love it the way you have made it. I think I might have a little more silk on mine than you do once I tear off the husks. In a pinch, and when you only want one, 3 minutes in the microwave on high, in the husk works, too.

Fresh summer corn is one of my favorite foods and this recipe is as simple as it gets. I really need to get out of the house and to the farmers market to pick up some corn asap.
If I had to have my last meal on this earth it would be corn on the cob and some sun-ripened tomatoes.
I also learned this method of cooking corn on the Food Network and it works so well!! I'm a college student on a budget and corn is a go-to meal! hehe

Oh yum! Nice alternative to my lazy (but effective) way of cooking corn in the microwave (I just stick the whole corn - husk and all - into the microwave for a few minutes and voila - dinner!)

I do have a small smoker grill, and simply place the corn on it. I always leave the husks on too, infuses more corn flavor. Oven-roasting works really well, in the absence of a grill.

I've never tried roasting corn in the oven before! Great idea. It won't be long until we have fresh corn here. In Wisconsin there is a saying that the corn in the fields should be "knee high by the 4th of July".
Simple recipe...but a great one. There is nothing better than the flavor of fresh corn. We have great local corn here on Long Island.
We've been eating fresh corn at least twice a week for the last month and it seems to get better and better!
