It just happened to be France's National Crêpe Day when I was attending a cooking lesson in Provence at Concept Chef. So in addition to our truffle lunch, Chef Julien whipped up a batch of crêpes.
To make the batter, whisk two eggs in a medium mixing bowl. Whisk in one cup of flour until blended. Pour in 1 cup of milk, a quarter of a cup at a time, so that the batter is smooth. Add a pinch of salt and two tablespoons of melted butter. Whisk until smooth.
Place a frying pan over medium heat. When the pan is hot, brush melted butter onto the entire surface of the pan.
When you are ready to ladle the batter onto pan, pick up the pan, have it tilted at about a 30 degree angle.
Ladle about a quarter of a cup of batter onto the tilted pan. Continue to tilt the pan in a circular motion to spread the batter evenly.
Allow the crêpe to cook for roughly two minutes. Use a plastic spatula to loosen the edges of the crêpe.
When the crêpe looks ready, peel it off of the skillet and it flip over. Brown the second side for roughly a minute.
Voilà! You have a crepe! Do you think I qualify for a French passport now?!

ReplyDeleteThis gorgeous little French restaurant here where I live just closed its door and I am so sad as they had the best crepe menu. Every crepe you could think of, both sweet and savory. This post reminds me how I am going to miss my twice-weekly visits! I better learn how to make my own now.

ReplyDeleteThank you for sharing this recipe! I am bookmarking this. There is a crepe cafe in Singapore which I used to go quite often when I was living there. I miss it! The crepes had savory fillings like tandoori chicken etc which was just delicious.

ReplyDeleteI love crepes! Growing up, my friend had a French father who would make crepes for us the morning after a sleepover. As kids we used to call them rolled up pancakes and would fill them with all kinds of wonderfulness. His crepes were so delicious and these look great too!

my daughter hosted a french movie night one weekend and we made crepes to go with the motif... BUT we had a lot of breakages... our crepes were challenging to make hahah. your step by step guide will come handy next time we attempt to make crepes again.. thanks again christine!
